I had a conversation with a client the other day about how much easier sweet breakfast seems to be on weekdays, when many of us are eating at our desks. Things like yogurt, instant oatmeal, cold cereal, fruit, and smoothies tend to top that list of quick & easy healthy breakfast options.

The night before, I put some steamed kale, black beans, and salsa in a pyrex container. In the morning, all I had to do when I got to work was reheat it and add a hardboiled egg and half an avocado I’d also packed in my lunch bag  It was a great way to get me going on a busy day!
