It’s been a while since I’ve posted a holiday dessert recipe, so here’s a fun one that’s great for a DIY project. I’m all for making room for an occasional sweet treat in the context of an overall healthy diet, and it can also be fun to make your own using minimally processed and whole food ingredients. These avocado-based truffles have a rich chocolatey flavor and happen to provide heart-healthy fats and fiber. Enjoy!

5-Ingredient Dark Chocolate Avocado Truffles

Ingredients

  • The flesh of 1 large ripe avocado or 2 small (about ½ cup)
  • 1 cup dark chocolate chips, melted (I used Lily’s)
  • ¼ teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder for rolling (optional)
  • 1 cup crushed freeze-dried raspberries or strawberries for garnish (optional)

Directions

-Pulse avocado and vanilla extract in a food processor until creamy.

-Place the chocolate chips in a microwave-safe bowl and heat for 30-second increments until fully melted.

-Add the melted chocolate to the bowl of the food processor. Pulse to combine.

-Pour the mixture into a bowl and cool in the refrigerator for at least an hour.

-Once cooled, scoop the mixture into 12 balls and roll into balls. Roll each in either unsweetened cocoa powder or crushed freeze-dried berries if desired.

These truffles can be stored in an airtight container in the fridge up to 3 days or in the freezer for up to 6 months.
